Barbecue Chicken Pizza
Happy Saturday friends! I'm making my list for the grocery store and I realized I haven't shared my Barbecue Chicken Pizza recipe on here in such a long time. It's my most requested recipe to date. Probably because 1. it's so quick and easy and 2. who doesn't like pizza? We make variations with pesto chicken, goat cheese and fig butter, bruschetta style, etc. The possibilities are endless!
*Just a side note for anyone who doesn't eat dairy, we use Daiya cheddar and mozzarella style shreds for Tagg--it's the best dairy free alternative out there and a dream for those with food allergies, intolerances or follow a plant-based diet.

It's hard to find packaged foods that are fully safe for my son because he has a severe life-threatening allergy to dairy, egg, peanuts, tree nuts and any possible cross-contamination from those foods. Ingredients:
Pizza crust (bake according to directions on the package)
Olive Oil
Shredded Chicken (I almost always use rotisserie chicken)
Barbecue Sauce (I like sweet baby rays)
Shredded Mozzarella Cheese or Italian Blend Cheese
Shredded Cheddar Cheese or Colby/Jack Blend Cheese
Red Onion (sliced thin)
Fresh Cilantro (diced)

Ingredients:

Directions:
Bake Pizza crust according to the directions and remove from the oven
Mix together shredded chicken and 1/2 cup of barbecue sauce
Spread 1 Tbsp of olive oil evenly over the crust
Spread 1 Tbsp of olive oil evenly over the crust
Spread 3 Tbsp of Barbecue Sauce evenly over the crust
Sprinkle a layer of shredded Mozzarella Cheese
Top with Barbecue Chicken
Sprinkle a layer of shredded cheddar or colby/jack on top
Add thinly sliced red onion
Top with fresh cilantro
Place pizza directly on the oven rack and bake for 8-11 minutes or until cheese is ready
