Southwest Stir-Fry
We're trying really hard to make better food choices.
And I know some of y'all are as well.
More fresh and less processed foods.
Matthew cooked a fajita style dinner Saturday night that was so tasty I begged him to make it again on Sunday.
It is so flavorful and I know y'all will love it too.
Since the whole world seems to be called home due to the snow I thought I'd post this yummy recipes for you to try out with your extra free time.
Ingredients:
black beans
red pepper (julienned or cut into strips)
onion (julienned or cut into strips) red or yellow will work
fresh cilantro (chopped)
limes (quartered)
chicken breasts (cut into strips)
brown rice or salad mix
fresh salsa (lime juice, orange juice, diced tomato, red onion, jalapeno, garlic, cilantro)
*We used fresh salsa from the grocery store instead of making to save time*
grill the cut up onion and red pepper on a non-stick grill pan

Remove grilled veggies from the pan and place on a side dish

Add chicken, onions, and red pepper to a
large saute pan

until thoroughly heated and mixed
In a sauce pan, add black beans, fresh salsa and fresh chopped cilantro
Bring to a boil
simmer on Low
until the beans are cooked

Squeeze your fresh cut limes all over everything
Sprinkle with cilantro

Option 1: cook brown rice according to directions and serve with the black bean mixture
